Root Beer Cookies

I remember years ago, my friend had introduced me to Root Beer Cookies and I was immediately hooked! Because really, who doesn’t love root beer and then mix it with a cookie???? Seriously! I find that this cookie is unique and perfect for those cookie exchanges and I know they are always a hit with the kids. I had my nieces and nephews over while I was making this batch and I don’t think they lasted more than 3 hours! For this recipe, I blended my Mom’s chocolate chip cookie recipe and used the root beer extract from Watkins to give it’s delicious flavour! Enjoy!

Unique cookie that incorporates 'Watkins' Root Beer Extract to make a delicious treat that any age will love!

Ingredients

  • Cookie Ingredients
  • 1/2 Cup - Butter
  • 6 tbsp - White Sugar
  • 6 tbsp - Brown Sugar
  • 1 egg
  • 1 cup + 2 tbsn - Flour
  • 1/4 tsp - Salt
  • 1 tsp - Root Beer Extract
  • 1/4 tsp - Vanilla Extract
  • 1/2 tsp - Baking Soda
  • Icing Ingredients
  • 1/2 cup - Butter
  • 3 Cups - Icing Sugar
  • 1/2 tsp - Vanilla Extract
  • 1 tsp - Root Beer Extract
  • 2 tbsp - Milk

Instructions

Preheat the oven to 350F degrees.

Cookies: In a large bowl, mix butter and sugars until nice and smooth. Add in lightly beaten egg and extracts and mix until combined. Add flour, baking soda, salt and mix into wet mixture, do not over mix. Use a 1.5 ounce cookie scooper and place the dough on ungreased non-stick baking sheets about 2" apart. Bake cookies for 10-12 minutes. Make sure to keep an eye on them as they can be fussy.

Icing: Cream butter in a medium sized bowl. Add 1 cup of icing sugar and mix until completely creamed together. Add both extracts, milk and 2 cups of Icing sugar and using an electric mixer, blend until smooth. When cookies have cooled, either spread or use a piping bag to add icing to cookies.
