Grandma Shirley’s Tomato Soup

I remember when I was a kid, I had the best tomato soup at my Grandma Shirley’s house. She had served it with crackers covered in butter and I never did forget it. I asked Mom for the recipe when I was older and was shocked at the simplicity of the soup. It takes hardly any time and I bet this would be amazing with fresh tomatoes from the garden. Unfortunately, the deer ate all of my tomatoes this year, so we went old school with the canned tomatoes. It turned out perfectly and it can be a base to many versions of tomato soup. We tried it with some fresh basil and it was incredible! Enjoy!

Incredibly simple and easy soup to make on a rainy day. I also like to add 6 - 8 leaves of fresh basil to give it a bit more depth as well as 'a bit more' pepper. Enjoy!

Ingredients

  • 1 Quart - Milk
  • 1/4 tsp - Baking Soda
  • 28 oz - Crushed or Diced Tomatoes
  • 1 tbsn - Butter
  • Salt and Pepper to Taste

Instructions

In a large saucepan, heat milk with baking soda but do not bring to a boil. In a small saucepan, heat tomatoes until very warm and then pour over the milk in the large saucepan. Stir in butter and add salt/pepper to taste. Let simmer for about 10 or 15 minutes.
